This has a lovely texture and flavour - very popular at our place.
Combine milk, tapioca and sugar in slow cooker. Cook on high 2½ - 3 hours. (see note)
Mix together eggs and vanilla then add to slow cooker while quickly stirring. Cook on high a further 20 minutes.
May be served hot or chilled.
Slow cookers can vary so keep an eye on this the first time you make it. I find it best to cook it on high for the first hour then set it back to low for the next 2 hours. After adding the egg I then turn it back to high for the last 20 minutes.
