Brown chicken. Take out of pan, brown shallots, add mushrooms and cook for about two minutes. Add broth and cook 10 minutes. Add chicken and cook for 10/15 minutes. Take chicken out, add mustard, cream and tarragon to sauce. Slice chicken and serve.
You can serve this dish with rice or potatoes (pommes dauphine are wonderful for this) and a green vegetable of your choice (for example green beans)
You can also use a whole chicken cut in pieces or chicken legs. If you use chicken on the bone, you will have to cook the chicken longer. If you increase the quantity of chicken, adjust quantities accordingly. You can also add a little lemon juice to the sauce.
