This recipe is based on trial and error of numerous rub recipe. The ground sesame seeds give it a unque flavor
Grind the Sicilian Spices (HEB Store) and toated sesame seeds in a spice grinder or bladed coffee grinder until power. Place in a small mixing bow. Add the remain ingredients.
Sprinkle liberally on your room temp. washed and trimmed brisket. Rub in with the back of a soup spoon. When meat has wet the rub (approx. 10 minutes) carefully turn over and do the same on the other side.
Place brisket in a 230 degree smoker. Add you favorite smoking wood (pecan, hickory, mesquite work best) for the first three hours. Let cook two more hours at 230 degrees. Wrap in foil and plave back in smoker for another 5 - 6 hours or until meast is 195 - 200 degrees. Alternatively once the brisket is in foil you can place it in 230 degreee overn until it reach final temperature.
Take out of smoker, wrap foiled brisket in a towel and place inside a cooloer for 45 to 90 minutes for resting. Slice across grain and serve with you favorite BBQ sauce.
Retain drippings for flavoring BBQ beans.
