We modified this one from peanut to almond. Makes about 1 cup.
Combine ginger, jalapenos, garlic, scallions, almond butter, coconut milk, fish sauce, lime juice, sugar, and cilantry into saucepan. Bring to boil over medium heat, stirring to mix well, then reduce to low 5 or 10 minutes. Thin with coconut milk if necessary.
