Most of us wait all year, counting down the days, for the Thanksgiving meal. More than just food, it's hours in the kitchen spent fussing over our favorite recipes handed down through generations. Seconds and thirds are one highlight of the meal, but what happens when you're stuck with too many leftovers? It's a real thing, probably. These Thanksgiving Sliders will transform those leftovers into something fun, and a little bit different!
- Gather your ingredients, allowing the turkey to come to room temperature. (Alternately, you can heat leftover turkey in the oven slowly if you prefer warm.)
- Combine flour and bread crumbs in a bowl.
- Scoop 1/4-1/3 cup of mashed potatoes and gently roll into a ball with floured hands.
- Dip the potato ball in the breadcrumb mixture, rolling to coat. Gently pat into a slightly flattened patty and set aside.
- Heat butter or oil in a pan over medium heat.
- Place potato patties in skillet, and cook over medium to medium-low heat for 3-4 minutes on each side, or until browned.
-Spread mustard on the inside of the roll. Place pickles on the bottom, followed by potato cake and turkey. Sprinkle coarsely crushed Fritos over the turkey and top with the roll.
-Serve and enjoy!
