A twist on the onion soup with a touch of white wine. brandy and dijon mustard.
In a large pan melt the butter. Now add the onions, sugar and pinch of salt.
Cover the pan and cook over medium high heat until the onions are soft, stirring occaisonally, about 20 minutes.
Increase the heat to high and cook uncovered for 10 minutes until the onions are a golden brown color.
Add in the flour, stir for 2 minutes, then add the chicken stock, beef stock, white wine, brandy and mustard.
Turn the heat down to medium low heat and let simmer for about 10 minutes, then season to taste with salt and pepper.
Enjoy!
Make sure you do not to let the onions cook to a dark brown as it will ruin the soup!
