1. Combine all brine ingredients
2. Place potatoes and brine in a zip lock bag that can withstand boiling water. Remove all air.
3. Boil bag for 20 minutes in water.
4. Remove fries from bag and place on drying rack. Place in refrigerator and cool.
5. Preheat oil fryer to 385.
6. Fry for ~ 2 min or until crispy.
