Suggest a better descriptionPreheat oven to 375 degrees.
In medium bowl, beat butter at medium speed for about 30 seconds. Add sugar. Mix well. Then add egg yolks and vanilla.
Mix flour and salt together and add all at once. Mix gently to form smooth dough.
Refrigerate for at least an hour or until still enough to work with.
Roll dough into 1 inch balls, then dip in beaten egg whites, then roll in nuts.
Place 2 inches apart on parchment paper lined cookie sheet. Bake for 5 minutes. Working quickly take cookies from oven and imprint each cookie with your thumb or a small spoon and return to oven. Bake about 10 minutes more. Cookies should brown gently.
Allow to cool completely before filling enter with icing glaze, mix about 2 cups confectioners sugar with a small amt of milk and vanilla or almond flavoring. It needs to be thick enough to spoon. You can divide it and add different food coloring. Makes about 2 dozen cookies.
