Suggest a better description1. Pre-heat the oven to 220°. Place the sweet potatoes, 2 tablespoons of oil, salt and pepper in a bowl and toss to combine. Arrange the sweet potatoes in a single layer overlapping slightly on the large lightly greased oven tray.
2. Place a few thyme sprigs on top of each lamb loin and fasten with kitchen string. Place the lamb on top of the potatoes, drizzle with the remaining oil and sprinkle with salt and pepper. Cook for 25 minutes for medium rare or until the lamb is cooked to your liking and the potatoes are tender. Set aside to rest for five minutes.
3. While the lamb is cooking, make the oregano salsa verde. Mix together the oregano, lemon rind and juice, garlic, oil, salt and pepper in a small bowl. Serve the lamb with the sweet potatoes and oregano salsa verde.
