MISE EN PLACE: Chop onion; Cube bacon; Mince garlic; Bring milk to room temperature
1) Saute onion in a large pan in oil. Stir in bacon and garlic and saute a few minutes more. Add salt, pepper, and nutmeg to taste; remove from heat.
2) In a large bowl, combine bread cubes and egg with hands, mixing well. Stir in milk and bacon mixture. If dry, add hot water until the consistency is a formable mass. Let sit, covered, for 30 minutes.
3) Bring a large pot of water to a boil. Form dumplings with wet hands and steep 15 minutes.
