Sausages baked in a Yorkshire pudding
Whisk the eggs, milk, pepper, and salt together until frothy and then continue whisking while adding the flour.
Once the flour has been fully incorporated add about 2 Tbsp of oil, melted butter or melted bacon fat and mix thoroughly.
Let the batter rest for an hour or so.
After your batter has rested, preheat your oven to 450°F and while it is heating up add 2 Tbsp of oil or bacon fat to a well seasoned 10.5" cast iron pan and brown the sausages on the stove top over med/high heat.
I always like to let the oven heat up for a few minutes before I brown the sausage because you want the oven to up to temperature just before the sausages are browned.
As soon as the sausage is browned and with the burner still on, give through batter one last mixing with your whisk and then pour the batter directly into the hot undrained pan and immediately transfer it into the hot oven on the middle shelf.
Bake for about 25 minutes or until the batter has puffed up and has a nice brown colour.
Traditionally this is made with English Bangers but I like to try different types of sausage just for variety.
I have used everything from four cheese Italian sausage to knackwurst and we enjoy them all.
Serve with Fries, Mashed potatoes or alone but don't forget the gravy.
Make sure your pan is very hot when you add your batter.
