1, SPRAY soup pot with Pam.
2. Place first 5 ingredients in large stock pot.
3. Pour in broth; sprinkle oregano on top. Drizzle with olive oil.
4. Cover pot, bring to a boil; reduce to simmer.
5. Cover and cook approximately 10 minutes or until almost all liquid is absorbed. (about 1" left.)
6. Season with salt and pper, stirring several times to distribute liquid.
