Indian Salad - tomatoes and yogurt seasoned with aromatic herbs and spices
Method:
1. Finely chop tomatoes, chili and cilantro
2. Mix the tomatoes, sugar, salt and yogurt and set aside
3. Heat a small pan with ghee on medium high heat. To test if the oil is hot enough for the mustard seeds, add one or two mustard seeds to the oil and make sure it has popped like popcorn kernels. If so, you are ready to add all of the mustard seeds. Wait for a few seconds for the seeds to crackle.4. Add cumin seeds, hint, curry leaves, green chili and cilantro. Stir, take off from heat and pour the spices into the tomato-yogurt mix and mix well
5. Empty into a bowl and serve cold. Note: if serving later, place in the refrigerator until ready to serve.
