Good with fish or as an appetizer. It makes a wonderful lunch when served with a nice salad!
Preheat oven to 400.
Slice the tomatoes very thin, remove pulp from each slice and drain on paper towels.
Chop the onions. Cook and crumble the bacon.
Fill pie crust 1/2 full with tomatoe slices, mounding towards center. Sprinkle with salt & pepper. Cover the top with 1/2 the bacon & 1/2 of the onion.
Repeat above with a second layer.
In a small bowl, mix mayonnaise with the cheese and spread it over the tomatoes. Bake for about 35 minutes.
To prevent over-browning cover with foil the last 10 minutes.
