Blanquear el huevo con el azúcar y la ralladura de limón. Incorporar la crema y el romero. Tamizar la harina, fécula y polvo de hornear e incorporarla a la preparación. Agregar la manteca derretida. Volcar la preparación sobre un silpat de 4 mm de grosor. Cocinar a 170ºC. Cortar un disco de 18 cm.
Mousse de yogurt:
Entibiar el yogurt con la vainilla. Mezclar con el merengue italiano, agregar la gelatina y la crema batida a 1/2 punto.
Crema de moras:
Cocinar las moras, azúcar y glucosa a 106ºC. Dejar enfriar. Agregar la gelatina.
