Finely dice tomato, red pepper, onion, jalapeno. Add splash of apple cider vinegar and set aside.

Sauce:
Mix mayo, sour cream, sriracha to taste and splash of lime juice

Mix ground beef with taco seasoning and form into two thin wide patties to fit tortillas. Season with salt and pepper and grill.
Preheat panini press. Cover bottom tortilla with shredded cheese and put on press. Place burger on cheese, cover with 2nd tortilla and close press. (flip the sandwich once to help flatten and more evenly brown tortillas)
Once browned, remove and pull off tortilla side without cheese. Coat burger with sauce, shredded lettuce, and pico.
Without panini press, the tortillas could just be browned in a pan or grill first and assembled afterwards.
