Heat deep fryer to 375. Deep fry plantain slices for 2 to 3 minutes, or until they begin to turn golden brown.
Remove plantains with slotted spoon. Allow to drain on paper towels for a few minutes. When cooled, flatten slices with the palm of your hand to look like pancakes, about 1/8 inch thick.
Return plantains to oil and fry until golden brown, 3 to 4 minutes, depending on thickness. Remove with slotted spoon, sprinkle with salt and drain. Serve warm.
