Heat oven to 350(F). Line baking sheet with parchment paper.
Stir together stuffing and stock. Let stand 2 minutes.
Place turkey in bowl and add salt, pepper, apple, onion, seasoning, eggs, and stuffing mix. Stir until blended. Form into 1.5 inch balls and place on sheets. Bake until firm, 20 minutes.
For sauce: Over medium-high heat stir cranberries, juice and sugar together. Bring to boil then reduce heat to simmer until slightly thickened, about 10 minutes. Remove from heat and stir in mustard. Use immersion blender to puree sauce prior to serving.
