Gravy: Melt better in double boiler. Blend flour, salt, pepper, celery seed and poultry seasoning with melted butter. Gradually add milk and mushroom liquid. Cook over boiling water, stirring until thickened and smooth. Remove from heat.
Croquettes: In separate bowl, mix turkey, onions, mushroom and parsley. Mix well. Spread in shallow greased pan and chill for several hours. When ready to serve, cut into rounds with cookie cutter. Coat croquettes with egg, then bread crumbs and fry until brown and crispy
