Cook noodles according to package directions. Drain. Set aside.
Meanwhile, in a 12-inch skillet cook ground turkey, mushrooms, and onion over medium heat till turkey is no longer pink and onion is tender but no brown, stirring occasionally to break up turkey. Stir in ¾ cup water, bouillon granules, thyme, garlic salt, and nutmeg.
In a small mixing bowl stir flour into sour cream or yogurt till smooth. Stir into skillet. Cook and stir over medium heat till thickened and bubbly. Cook for 1 minute more. Serve over noodles. Sprinkle with paprika, if desired.
If you have children that abhor mushrooms, chop them into tiny pieces. They will still flavor the sauce but blend in with the ground turkey. Win win!
