2. Drain tomatoes. Slice thinly. Place on rimmed baking sheet.
3. Add gnocchi to baking sheet
4. Drizzle with oil. Season with salt and pepper. Toss well to combine.
5. Spread out in an even layer and roast, stirring halfway through, until gnocchi are plump, 18-20 minutes.
6. Remove from oven. Sprinkle with spinach.
7. Return to oven and roast until spinach is just wilted, 2-3 minutes.
8. Garnish with cheese if desired.
