Suggest a better descriptionBake potatoes until soft and easily pierced with a fork. Let rest for 15 minutes. Scoop out the flesh into a large bowl. Add the butter and 4 ounces of the cheese.
Heat the cream in a small saucepan on the stovetop over low heat for 1-2 minutes then add the barbecue rub and the scallions. Add the cream to the potato-cheese mixture. Whip until combined. Season with salt and pepper. Spoon the mixture into the shells and top with the remaining cheese.
Refrigerate or freeze. When ready to serve, thaw and bake in 350ยบ oven for 30-40 minutes or until heated through.
