Takes some time to make, but worth it. This recipe includes bacon and beef. Normally, 8 servings enough to make. If I double it, it does fit in my largest pot. But challenge to eat all of it "in time". Complements with good black or rye bread.
1. Preheat oven to 350 degrees
2. Placed diced bacon in Dutch oven and cook, stirring, over medium high heat, about 3 minutes.
3. Add the beef and continue to cook, stirring, until beef brown on all sides, about 6 minutes
4. Remove both meats from Dutch oven with slotted spoon.
5. Add the onions and carrots to Dutch oven and stir to coat in fat mixture
6. Cook until soft, about 4 minutes.
7. Add the garlic, oregano, dill seeds, and bay leaves and cook, stirring for about a minute
8. Add the red wine wine vinegar and stir to de glaze pot
9. Return both meats to Dutch oven, and add bone broth, salt, and pepper and then bring to a boil
10. Reduce heat and simmer, partially covered, until meat is tender, about 1-2 hours
11. Wash beets, dry, and coat with oil, place on cookie sheet
12. Roast until tender, a little over an hour at 350 degrees
13. Remove from oven and set aside to cool
14. When cool enough to handle, trim stem and root and remove skins
15. Dice beets into about 1/4 inch pieces, set aside
16. Add potatoes, beets, cabbage, parsley, tomato paste and celery seeds and simmer low for another 30 minutes. Make sure potatoes soft
17. Season to liking with additional vinegar, salt, and pepper
18. Ladle into bowl and garnish with dollop of sour cream and about a teaspoon of finely chopped fresh dill. Complements well with Russian black bread or rye bread
