An Indian staple, best served with an assortment of chutneys.
Soak urad dhal in warm water in one pot. Soak for 3 to 4 hours uncovered. If it is winter, place the mixture in a warmed oven (Set the oven temp. to 250 degrees for 15 to 20 minutes. Put the urad dhal in there for the 3 to 4 hours.) Grind in a blender the contents in the pot until the grains are slightly coarse. Pour into a bowl. Salt to taste. Add onion to the mixture. Combine. Drop in hot oil. Since the vadai won''t cook in the middle, poke a hole in it.
Serve with a chutney.
