Suggest a better description1. Place fine mesh sieve over medium bowl and set aside.
2. In a medium sauce pan, heat off, whisk together sugar, cornstarch and salt.
3. Very gradually (a few Tbsp. at a time) whisk in the milk, taking care to dissolve the cornstarch.
4. Whisk in the egg yolks.
5. Whisking constantly, cook over medium heat until first large bubble forms and sputters.
6. Reduce heat to low, still whisking. Cook for 1 minute.
7. Remove from heat.
8. Immediately pour through sieve into bowl.
9. Stir in butter and vanilla into hot pudding.
10. Place plastic wrap directly on surface of pudding (to prevent skin from forming). Chill for at least 3 hours up to 3 days.
11. Before serving, whisk pudding until smooth.
Variations:
Chocolate: add 1/3 c. Cocoa powder at step 2.
Chai-Cinnamon: Brew 2 chai teabags in 3 Tbsp. boiling water. Set aside until cool. Squeeze out tea bags and discard. Mix tea into one recipe of cooled vanilla. Dust with ground cinnamon.
Mocha-Chip: Dissolve 4-5 Tbsp. instant expresso powder in 2 Tbsp. boiling water. Set aside to cool. Mix dissolved expresso into 1 recipe of cooled chocolate pudding. Garnish with ¼ c. mini chocolate chips.
Rum-Raisin: Combine ¼ c. raisins and 1/3 c. run in a small sauce pan. Bring to a boil. Remove from heat and cover. Set aside until cooled. Remove raisins from rum and reserve. Mix rum into 1 recipe of cooled vanilla pudding. Garnish with reserved raisins.
Chocolate-Ginger: Mix 1 tsp. ground ginger into 1 recipe of cooled chocolate pudding. Garnish with ¼ c. chopped crystalized ginger.
