In a large bowl, mash the bananas until soft. Add the oil and sugar and cream together.
In a separate bowl, combine the flours, salt, and baking soda. Add into the banana mixture and stir just until combined. Fold in the walnuts or blueberries, if using.
Grease or line a muffin pan and fill each 3/4 full. Bake for 23-25 min.
