Preheat oven to 360 deg F
Whisk together eggs and mustard in a large bowl
Stir in bread and cheese and set aside.
In a skillet over medium-high heat, saute the leeks and mushrooms (4-6 minutes) in olive oil
Stir in Swiss chard, brussel sprouts and celery, continue to saute for another 3-4 minutes
Salt and pepper to taste.
Stir in garlic and cook another minute, remove from heat and let cool a few minutes.
Fold vegetable mixture into egg mixture.
Pour into a lightly greased baking dish, and bake until center is set (30-45 minutes).
Remove from oven and let stand 5 minutes and serve
