Saute onion and garlic in butter. As these cook, add sliced carrots, potatoes, the green vegetable(s), and any other vegetable desired. Saute until just crunchy. For added nutrition, add wheat germ and / or sunflower or sesame seeds. Sprinkle with soy sauce.
In a casserole, alternate layers of the vegetable mixture with layers of cheese. Bake at 350 degrees until bubbly, approximately 20-25 minutes.
