Cook onion in small amount of oil until soft, add sweet potato, carrots and pumpkin and continue cooking until all soft. Let mixture cool down.
Add spinach, cheese and eggs. Season to taste with stock powder or salt and pepper.
If using frozen puff pastry then put mixture into fridge to cool for few hours.
When mixture is ready to use, Bring puff pastry from freezer and let thaw for a few minutes until usable.
Put mixture into middle of puff pastry, bringing sides in to cover filling. Crimp edges. Put a few holes in pastry. Cook on 210 for 30-40 mins.
Can be refrozen, but do as quickly as possible to ensure puff pastry doesn't thaw out too much. To refreeze cover in baking baking, then wrap tightly in foil before freezing.
