Potatoes
Peel, quarter and boil the potatoes until done. Mash with the remaining ingredients, adding additional milk is necessary to make creamy.
Lentils
Combine the lentils and 3 1/2 cups water in pot. Bring to boil, reduce heat, cover and let simmer about 30 min or until all the water is absorbed.
While lentils are cooking saute onions, carrots, and garlic in olive oil until tender.
Stir in oregano and Worcestershire sauce.
Transfer into the cooked lentils.
Vegetables
Place tomatoes in a small pot and cover with 1 cup water.
Bring to simmer and cook covered 5 min or until softened.
While tomatoes are cooking saute onion, peppers and garlic in olive oil until browned, adding spices while stirring.
When tomatoes are soft chop them then add them with their cooking liquid into the sauteed pepper mixture.
Add tamari, TVP and 3/4 cup water. Cover and simmer for about 15 min.
Assembly
Preheat oven to 350 deg F.
Spray oil a deep casserole dish then pack with lentils into the bottom of dish.
Next evenly spoon on the sun-dried tomato vegetable mixture.
Spread mashed potatoes over the top and dust with paprika.
Bake for 30 min. uncovered.
