Suggest a better descriptionCover beans with sufficient water and allow to soak overnight - 1 cup (250 ml) cooked beans = 1/2 cup (125 ml) mashed beans. Next morning, drain the soaking water from beans and add boiling water; enough to cover. Simmer beans on stove until soft; stirring frequently. It is very important to cook beans until quite soft to improve flavor. Drain beans and mash in a blender. Add remaining ingredients; blend well. Pour into an unbaked pie shell. Decorate with pecan halves. Bake in preheated 350 F (180 C) oven for 45 minutes.
Suggestion: soak extra pinto beans, process and freeze mashed beans for later use.
