French champagne glass dessert learned in the Private Kitchen, from Alix de Lauzanne
Blend the 2/3rd of the strawberries in a smoothie blender, set aside enough strawberries for decoration.
Beat the cream with the icing sugar to white peaks, first slow and then on fast speed.
Add 1/3rd of the strawberry mix to half or the cream, should be a nice pink mousse.
Blend the other half of the cream with the yogurt, careful not to break the mousse.
Assemble the verrines (glasses) - use 6 wine or even better, Champaign glasses.
Layers from the bottom:
- strawberry turmix
- pink strawberry cream mix
- a few pieces of biscuits
- cream-yogurt mix
- decorate with half a strawberry.
Keep it in the fridge until served.
