Suggest a better descriptionBring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add potatoes, spinach, and mushrooms. Stirring occasionally, cook until potatoes have thawed, spinach has wilted, and mushrooms have softened, about 5 minutes. Transfer contents of the skillet to a bowl and set aside.
Remove skillet from heat, re-spray, and return to medium-high heat. Add egg substitute, tomato, and cheese, breaking the cheese wedge into pieces as you add it. Scramble until egg substitute is fully cooked, about 3 minutes.
Add egg scramble to the bowl and stir to mix. If you like season to taste with salt, pepper, and Italian seasoning and top with ketchup or salsa. Enjoy!
