This makes dough for 2 boli's. I start by combing the salt, yeast, water and 75% of the flour at first in a stand mixer for at least 5 min until smooth, then slowly add the rest of the flour (or more if necessary) and mix for for at least another 10-15 min until it comes together into a ball, but still a little tacky. Coat with olive oil and let it rise for 4 hours or more at room temp until doubled. Split into 2, shape into a ball, and let it rest for another 1-2 hours on the counter. Dust with flour and press into shape.
Fold the top over, and slice a few small openings in the top
Cook at 475, middle of the oven, for 20 min, or until deep brown on top.
Let it rest until the 3rd person asks if it's ready.
Vinnys Fillings:
Prep: sauté peppers and onions in olive oil until soft
2.5 green peppers; 1/2 onion
Layers, starting from the bottom
1/3 lb sliced provolone cheese
1/2 lb ham (preferably the stuff grocery stores call "hot ham" or "Coppa")
1/4 lb genoa salami
oregano (don't go light)
sautéed peppers and onions
1/3 lb grated mozzarella cheese
