Kale, Sweet Potato and Onion warm salad.
Peel and cut potatoes into 1" cubes. Add to boiling water.
Cut shallots into long strips. Place in pan on medium heat with olive oil and let caramelize.
Rinse and cut kale into small pieces. When potatoes are soft, strain and set aside. As shallots caramelize add kale on top. Stir to assist kale cooking down. Add salt, pepper, and onion powder to taste.
When kale is evenly cooked and stirred, add to large bowl with sweet potatoes and stir to combine.
