Marinate water chestnuts in soy sauce for a day
Wrap each chestnut in 1/3 or 1/2 piece of bacon, securing with a colored toothpick (not sure why colored).
Bake in very slow oven (250 degrees) about 1 1/2 hours until bacon is brown and crisp. Keep draining off fat. When cooled, these may be laid singly on a baking sheet and frozen, then put into a ziplock bag and kept frozen.
To Serve: Heat in oven or electric warmer.
