Suggest a better descriptionCut the cheese into cubes and place in a bowl. Add enough milk to just cover the cheese and leave to soften for 3-4 hours. Put in a bain marie (or in a microwave on medium) and stir occasionally until the mixture becomes smooth. Do not overheat as it will become stringy. Beat in the egg yolks, mustard, salt and pepper. Spoon the mixture over crusty bread and grill until lightly coloured and becoming firm.
