Easy chicken and dumplings
Remove skin from chicken and shred chicken into small pieces.
Sautee onions in vegetable oil in small pan.
In a large pot add:
chicken broth
poultry seasoning
salt & pepper
frozen vegetables
onions
Bring to boil. Then add shredded chicken, bring to boil, and then simmer.
Roll out biscuit dough on floured surface and cut into pieces to make the dumplings. (I usually use a pizza cutter to slice the dough - its quicker)
Add chicken gravy to pot and stir.
Drop in the dumplings a few at a time into the pot; cover and cook about 10-15 minutes until dumplings are cooked all the way through. (Don't forget to stir periodically so the dumplings don't stick together)
Optional Dumplings:
Mix ingredients listed, and add as before
Southern Dumplings
Mix well to form a stiff batter. Drop by tablespoonfuls into simmering soup. Cover and simmer for 15 to 20 minutes.
