Saute shallots in butter 2-3 min. Add wine, cream and broth and lemon juice. Simmer until reduced by half, 8-10 min. Whisk in butter 1 T. at a time, wait until melted before adding next addition, stirring constantly. Finish with sage and seasonings.
Keep warm over water bath if needed
