Suggest a better descriptionPreheat oven to 400. Pierce yams with fork, roast till tender 40-50 min. Cut off skins. Cut yams crosswise to 1/2" thick rounds. Arrange slightly overlapping in 9 x 13 glass dish. Cover with foil, set aside. Melt butter over med heat stirring 8- 10 min till butter browns. Blend shallot garlic and salt in processor till smooth. Add mustard and vinegar, drizzle butter in with motor running. Spoon viniagrette over potatoes and serve.
