Suggest a better descriptionPlace baby carrots at bottom of crockpot. Sprinkle roast with pepper and salt; place in crockpot on top of carrots and scatter onions around roast. Add potatoes.
Stir soup, water, balsamic vinegar, thyme and Worcestershir together and pour into crockpot.
Cook on low 6-8 hours, or on high 3-4 hours.
Transfer roast to a cutting board and slice against grain into 16 slices. Serve with vegetables and gravy. Yields about 2 slices of meat, 1 cup of vegetables and 1/4 cup of gravy per serving.
