The only one-loaf recipe I could find.
Sprinkle yeast over 1/4 cup water. Let stand 10 minutes to soften. Combine flour and salt. Stir in yeast, sourdough starter (if using) and 1 cup water. Knead in stand mixer fitted with a dough hook for 10 minutes. Let rise in greased bowl until double, about 1 1/2 to 2 hours). Punch down. Shape into 12 mini-rounds or 1 loaf. Let rise until double. Glaze if desired. Bake at 400 degrees 15 minutes for rolls; 40 minutes for a loaf.
