1. Preheat oven to 350F. Have a large baking dish ready.
2. Fill a 4-quart Dutch oven with water and bring to boil over high heat. Add the squash and cook until tender, about 5 min. Drain the squash and return to the pot.
3. Add the butter and mash the squash completely.
4. Add the eggs, cream, stock, cream cheese, onion, parsley, italian seasoning, garlic, salt and pepper to the mashed squash.
5. Pour the squash mixture into the baking dish and sprinkle with the cheddar.
6. Bake for about 35 min, until the top is golden brown.
