Heat oven to 450
Combine ingredients in a tall glass pouring container.
Blend with hand held food processor.
Leave on counter to obtain room temperature - cover container with plastic wrap.
Blend a few times and once before getting ready to use.
Place small amount of beef fat in each muffin tin.
Place in oven and render the fat.
Pull out any remaining piece of fat.
Pour in pudding mixture.
Place in hot oven and cook for 20 to 25 minutes. You want the tops to be brown but not burnt so keep an eye on it.
DO NOT OPEN OVEN while cooking or the puddings will deflate.
When ready remove from oven and pop out of muffin tins onto a platter.
