Method
1. Take a mug and fill to top with plain flour, tip into a large clean bowl.
2. Using the same mug, crack enough eggs into the mug to fill it mix them and add them to the bowl with the flour.
3. Same mug, fill with milk (I use semi skimmed but whole milk works equally well!) add to eggs and flour.
4. Add salt and pepper to taste, whisk mixture for a few minutes until thoroughly combined and set aside for a minimum of 30 minutes, longer if you can. Transfer to a jug for ease of pouring!
5. Take a Yorkshire pudding tray put a tablespoon or so of oil or beef dripping into each compartment, more oil if you are using bigger trays. Heat the tray in a very hot oven (about 200 degrees) until the oil is very hot and smoking (be careful when handling).
6. Remove the tray from the oven and put on a level, heat resistant surface or mat.
7. Pour the batter mixture evenly into the hot oil as quickly as you can, and immediately place into the very hot oven.
8. Cook for approx 25- 30 mins in the hot oven until risen and golden – do not open the oven door or they will collapse!!!!! Patience is a virtue and will be rewarded!!! ????????
These can be made ahead of time and stored in a fridge to reheat or allow to cool and freeze, defrost thoroughly before reheating!
