This is fun to make when you want something filling that will suffice for lunch or dinner, as well as breakfast/brunch.
It's good to prepare while having a conversation at the kitchen prep area. Speaking from experience.
1. Lightly whisk eggs in a bowl with minced garlic and seasoning salt (to taste).
2. Rinse potatoes, then cook in frying pan with pepper until lightly browned. Move to side.
3. Broil sausage on high in the broiler for 5 minutes (or stir in a sauce pan until cooked). Move to side.
4. Sauté onions and green pepper in olive oil until slightly browned.
5. In a greased 8"x8" casserole container, place Potatoes, Sausage and vegetables, in that order.
Layering them helps to ensure that all ingredients are evenly distributed throughout the pan, as opposed to mixing them.
Preheat oven to 375F.
6. Spread Cream Of Mushroom soup evenly over ingredients (I even mixed it WITH the eggs once).
7. Pour eggs evenly across the top.
8. Add shredded cheddar cheese. May add more, if desired. Just make sure that disk is covered completely in cheese.
9. Bake in oven for 35 minutes.
You can substitute the sausage with cooked bacon, ham, ground sausage, etc. Add pepperoni if you really want to fill your eaters up.
If using a 9x12 casserole container, add 2 more eggs, another 1/4 lb of sausage and 1 potato. And use full-sized green peppers and onions.
