1. Preheat oven to 375 degrees. Put oil in an 8-inch square baking dish and spread to coat the bottom. Sprinkle the garlic, onion and basil over the oil. Spread rice over top. Layer the zucchini and tomato slices over rice and pour boiling water over the top. Season with Salt and pepper.
2. Bake for 20 minutes, uncovered. Sprinkle cheese over top and bake another 10 - 15 minutes or until cheese is golden brown and vegetables and rice are cooked.
