Zucchini cheese disc's
Preheat oven 400 degrees
Line two baking sheets with foil and spray with Pam or veg. spray.
Slice Zucchini into 1/4 in. rounds and toss well with oil; coat well.
In a large bowl combine breadcrumbs,Parmesan and salt and pepper to taste. Take cut zucchini and put them in the bowl with breadcrumbs-Parmesan mixture coating both sides of each round, pressing mixture to adhere. Will provide a light coating.
Place rounds on baking sheet single layer. Sprinkle remaining breadcrumb mixture on rounds on the baking sheet.
Bake for 22min - Until golden brown
