Halved zucchini with bread crumbs and bacon; baked
Preheat oven to 350.
Slice 2 Zucchini or Summer Squash in half the long way.
Make a bunch of randon slits in the seeded side of the squash about 1/8-1/4" deep. This is to help hold the butter and to give it a way to soak into the squash.
Apply butter to the seeded surface just like you were buttering toast. Sprinkle with Italian Bread Crumbs, enough to cover the butter.
Add a slice of bacon on top.
Place in a baking dish with a little water on the bottom, maybe cup. Bake for 30-40 minutes or until the bacon is done.
