Todays offering is from a Recipe-a-Day member D. Hanson, who knows how to enjoy a holiday specialty drink without all the fat and sugar. Todays recipe is perfect timing for those of you who would prefer to indulge a bit less during the New Year. You can prepare it with or without the rum, and it will store, refrigerated, for about 3 days. D. Hanson assures The Kitchen Staff that this is a "killer" recipe. Pour the milk in a blender and add the egg substitute, vanilla pudding, sugar substitute, vanilla extract, and rum (if desired). Blend for about a minute, then refrigerate to chill. The mixture will thicken as it chills. You may elect to add the rum, and even a splash of orange extract, just prior to serving. Garnish each glass with a dash of nutmeg and serve.
